Most days, I feel like I’m trying to juggle live chickens. Like many families, my husband and I both work. He has his own, seven day a week, health and wellness business and three days a week I am in the office. Together we manage the household, our business, our family and our sanity! Everyday we are in and out of the house and car, at parks, at the gym, in business meetings, running errands, and working. It is rare that I have any more than two hours of time at home at a single time during the day (Sound familiar?), but we vow not to eat fast food for a bit of health assurance and money savings (we do slip up, but 90% of our meals are homemade or semi-homemade). And, with the economy effecting our families and communities, it is very important to us to know that it is possible to eat yummy, healthful food economically. So, for on an average of $50 a week for a household of three, we maintain a nutritious, healthful diet without compromising our taste bud’s expectations.

Our goal in a nutshell is to create healthful, compact, easily stored, and easily eaten food, prepared in a few steps, and in no more than 30 minutes, requiring only a few basic ingredients at a total price of $5 or less.

Armed with a menagerie of appliances that I have collected over the years, I try to modify all of my recipes to take advantage of their time-savings. The trick is, to let them do all of the heavy lifting, per se, for you, so you only have to focus on the critical steps.

By no means am I anything more than a hobbyist in the kitchen, no master chef, here. Nor am I a registered dietitian. But, I do try to find the best recipes and the best methods for creating consistently delicious food that fits our lifestyle.

We love to share what we find with others, and learn about their successful techniques. I hope you enjoy these modified recipes as much as I have enjoyed preparing them!
